Neven Maguire revisits north Co Kerry, Dublin City and Co Mayo, beginning at Ballyseede Castle outside Tralee, where he meets sous chef Roy Schoenmaker. In Dublin, Neven is treated to another recipe from Richie Wilson, culinary director of Sole Seafood and Grill, before he heading Ashford Castle to learn another recipe from executive chef Philippe Farineau.
