Andi Oliver presents as chefs from the Central region prepare mains and desserts on the theme of the Olympic and Paralympic Games. One chef prepares sand pit of vegetables, with a mushroom and leek pithivier discus and ribeye steak, representing the stadium for the T42 Paralympic race won by Nottingham's Richard Whitehead. There's another beef dish, inspired by Staffordshire's Emily Scarratt, who captained Team GB's Rugby Sevens at Rio. For desserts, one dish celebrates the Olympic Torch, in the form of a cone filled with miso curd, passionfruit foam and candy floss flames, all sitting on an orange posset with raspberry jelly and tuille
