Andi Oliver presents as the chefs from Central England serve their starters and fish dishes inspired by the Olympic and Paralympic Games. The contestants are Norwich's Liam Nichols, Worcester-bred Sam Asthon-Booth, Birmingham-born Adam Smith and Louisa Ellis from Nottinghamshire, while dishes include a recreation of the Olympic podium in the form of a trio of pepper terrines, complete with bronze, silver and gold pastry medals, a beetroot tartare with a caraway tuile and seaweed and wasabi emulsion, poached brill and truffled trout mousse and Danish chalk stream trout and fermented cabbage tapenade
